2 cups dried Pinto beans
Country cured pork side meat or country ham pieces for seasoning
1 tsp. sugar
Salt
Pepper

Directions:
Sort the beans, making sure all rocks are removed. Rinse the beans in cool water then pour into a pot, cover with water by 2 to 3 inches. Let the beans sit overnight. Rinse the beans and set aside.

In a large pot, fry out the side meat until brown. Add the rinsed beans to the pot and cover with water by about 2 inches. Add ham, sugar, salt and pepper. Bring to a boil, then reduce the heat, cover and simmer for 2 hours, or until beans are tender. Add water to pot as needed. Beans should have a thick broth. Toward end of cooking time, add additional salt and pepper, seasoning to taste.
