1 tbsp. olive oil
1 1/4 pounds white mushrooms trimmed and sliced
1 medium red onion finely chopped
2 garlic cloves finely chopped
1/2 tsp. dried thyme
Salt and pepper to taste
4 1/2 cups chicken or vegetable broth
2 cups water
1 cup Quick cooking barley
1/4 cup fresh parsley finely chopped
1 tbsp. lemon juice
1 oz. Parmesan cheese (shaved with a vegetable peeler)

Directions:
In a soup pot heat oil, and brown garlic, onion, mushrooms, salt, pepper, and thyme about 6 to 8 minutes. Add broth and 2 cups of water. Bring to a boil and add barley, reduce heat and simmer for 10 minutes or until barley is tender. Remove soup from heat and add lemon juice, parsley, and Parmesan cheese.
