2 large potatoes, peeled and cubed
2 onions, chopped
1 tbsp. margarine
1 large can cream style corn
3 slices bacon, cooked and crumbled
1 large can evaporated milk
3 cups water
approximately 1/2 cup mashed potato flakes
1/2 cup shredded Cheddar cheese
salt and pepper to taste

Directions:
Directions:
Simmer potatoes in small amount of water until fork tender. Saute onion in margarine. When potatoes are tender, add all but mashed potato flakes and cheese. Add mashed potato flakes until thickened. (might not take the whole 1/2 cup). Simmer for 15 minutes. Add cheese. Simmer until cheese is melted. Stir well and serve.
