1 stick of butter
1 onion diced
3 cups of chicken broth
1 cup of half and half
1 cup of milk
2 heads of fresh broccoli
1/3 cup of cornstarch
1/4 tsp. black pepper
1/4 tsp. garlic powder
16 oz. of Velveeta cheese, cubed
sea salt, to taste (at least 1/2 teaspoon)

In a large pot, melt the butter over medium heat. Add the onion and cook, stirring until the onion is tender.
Wash and trim the ends of the fresh broccoli (including the small stems because they are good in the soup!). Chop the broccoli into small pieces. Add broccoli, chicken broth and half and half to the pot. Cover and bring to a boil. Then simmer until broccoli is tender, about 10 – 15 minutes.
In a small bowl, whisk together the milk, cornstarch, pepper, and garlic salt. Add to boiling broccoli mixture, stirring until thickened, about 3 – 4 minutes.
Reduce heat to low-medium and stir in cheese until melted. Add salt to taste
