1/4 cup olive oil
1 cup finely chopped onion
1/2 cup chopped celery
6 cups reduced sodium beef broth (or veggie broth if you want to go vegetarian with this)
2 medium zucchini, cut in 1/4 inch cubes
1 1lb. can tomatoes
1 1lb. can cannelini beans (white kidney beans)
1 cup Ditalini or elbow macaroni
1 cup finely chopped cabbage
1/2 cup fresh chopped parsley
1 clove garlic, minced
1 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
In a large sauce pan, heat oil. Add onion and celery; cook until tender. Add beef broth and remaining ingredients. Simmer uncovered for 30 minutes. Serve with Parmesan cheese for sprinkling and crusty Italian bread. Healthy, filling, and delicious! Makes about 8-10 servings.
