1 T butter
3 ½ C cubed peeled butternut squash (about 1 ½ lbs.)
¾ C chopped carrots
¾ C chopped onion
1 ½ C fat free chicken broth
1 C 1% milk

Directions:
Directions:
Melt butter in a large saucepan over medium-high heat. Saute onions and carrots until onion begins to turn slightly brown. Add squash. Continue to cook for 10 minutes longer. Add chicken broth and bring to a boil. Cover, reduce heat, and simmer 30 minutes. Remove from heat and let slightly cool. Add milk and stir.
Place squash mixture in a blender. Remove center piece of lid (to let steam escape) and cover with a paper towel. Blend until smooth. Serve immediately, or refrigerate for later.
