2 tbsp. butter
1 large onion chopped
5 1/2 cups chicken stock
1 1/2 cups frozen corn kernels
3 large potatoes, peeled and diced
1 cup heavy cream
3 tbsp. All-Purpose flour
Salt and pepper to taste
Fresh chopped parsley for garnish

Directions:
Directions:
Melt butter in a medium soup pot. Stir in onion, cook over medium heat for 8 minutes, stirring occasionally. Add chicken stock, corn, potatoes, salt and pepper and bring to a boil. Lower heat. Cover and simmer about 10 minutes, or until potatoes are tender. In a small bowl, whisk cream and flour together and stir into soup. Bring back to a boil Reduce heat and simmer 10 minutes. Garnish with fresh parsley. Simple and satisfying!
