2 c. uncooked quick-cooking oats
⅓ c. packed brown sugar
⅓ c. raisins
2 tbsp. chopped walnuts or almonds
1 tsp. baking powder
¼ tsp. salt
½ tsp. cinnamon
1 ½ c. fat-free milk (or 1%)
½ c. applesauce
2 tbsp. butter, melted
1 large egg, beaten
½ tsp. vanilla extract
2 tbsp. brown sugar

Preheat oven to 375º F. Combine first 7 ingredients in a medium bowl. Combine the milk, applesauce, butter, vanilla, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8 in. square baking dish coated with cooking spray. On top sprinkle about 2 tablespoons brown sugar. Bake at 375º F for 20 to 30 minutes, until a knife comes out clean
in center.
