2 Tbsp butter
1 c onion, chopped
1 bunch green onions, chopped (original recipes
calls for leeks)

3 medium potatoes, peeled and
2 c vegetable stock (one 14 oz can)
½ tsp curry
¼ tsp red pepper

1 c milk
8 oz (1/2 lb) cooked shrimp, tails removed

Directions:
Directions:
Sweat all the onions (cook in the butter over
medium heat until tender but not brown)
in large pot about 5 minutes
add the stock, potatoes, and spices; cover
and simmer 15-20 minutes until potatoes
are very soft turn off the heat and stir in
milk and shrimp, keep covered
serve when shrimp is warmed
