Ingredients: Ingredients: 1 whole chicken breast or half a fryer (2 half breasts) 1 small head lettuce, finely shredded 2 stalks of green onion, shredded 4 Tablespoon chopped Chinese parsley (cilantro) - optional 2 Tablespoon toasted sesame seeds (if raw brown on dry pan) 2 Tablespoon roasted almonds, chopped (buy raw and fry) 8 squares of Won Ton dough, cut into 1/8" strips (separate sheets before cutting) - can use more than this 2 oz rice noodles (Py Mai Fun) - can do more than this 3 cup oil for deep frying 2 Tablespoon red ginger (optional to taste)
Marinade for chicken: 2 Tablespoon soy sauce 1 teaspoon salt 1 Tablespoon Sherry
Salad Dressing: 4 Tablespoon Sugar 2 teaspoon salt 6 Tablespoon White Vinegar 1/2 teaspoon pepper 4 Tablespoon Peanut Oil 2 Tablespoon Sesame Oil

Directions:To Prepare: 1. Prepare dressing about 1 hour ahead of time. 2. Marinade the chicken for 30 minutes. 3. Shred the lettuce and green onion, chop the cilantro, cut the won ton squares into strips.
Method: 1. Place the chicken in shallow pan, bake in 350º oven about 30 minutes (may also broil). When chicken is cool, TEAR the skin off (along grain) and cut into strips. 2. Heat 3 cups oil to about 400º, drop in (small section at time) rice noodles. They will "explode" into large puffs, quickly turn over and remove immediately. Drain on paper towel. When cool, press noodles with paper towel to crunch and break into pieces. 3. Lower the temperature of oil to 350º, deep fry the won ton strips until light brown, take out at once and drain on paper towels. 4. Put chicken into large bowl, pour in 1/3 of dressing, mix well, then add green onion, parsley, won ton strips, rice noodles, and lettuce. Add the remaining dressing and toss well. (May want to save some on side) 5. Sprinkle the roasted almonds and sesame seeds on top and serve. |
