12 large mushrooms
1 medium onion - chopped
1/4 cup finely chopped green pepper
1/2 cup finely crushed Ritz crackers
1/2 teaspoon seasoned salt
dash of pepper
2 Tablespoon butter
2 oz pepperoni (1/2 cup diced)
1 small garlic clove (minced)
3 Tablespoon grated parmesan cheese
1 Tablespoon snipped parsley
1 teaspoon oregano
1/3 cup chicken broth

Directions:
Directions:
Wash mushrooms. Remove stems and chop them finely - SAVE CAPS. Drain caps on a paper towel. Melt butter in skillet, add onions, pepperoni, green pepper, cheese, parsley, seasoned salt, oregano and pepper. Mix well, stir in broth. Spoon stuffing into caps, rounding the tops. Place in shallow pan with 1/4 inch of water. Bake uncovered at 325º about 25 minutes or until heated through.
