1 lb. unsalted Butter
4 3/4 cups Flour, sifted (use 2-3 tbsp. to cover pecans)
4 cup chopped Pecans
2 Egg Yolks
1 tsp. Vanilla
8 tbsp. (rounded) Powdered Sugar
3 tbsp. Ice Water
2 lbs. Powdered Sugar

Directions:
Directions:
Beat butter until it is white. Add 8 tbsp. powdered sugar, then egg yolks. Add flour, ice water and vanilla and beat well. Add in floured pecans last.

Make rounds (about walnut size) or crescents and bake on ungreased, heavy cookie sheet for 30 minutes at 300º; then lower temp to 250º and bake another 30 minutes. Cover with sifted powdered sugar, after removing from the oven and again just before serving. Makes about 10 dozen cookies.
