7 to 8 lbs Potatoes (golden potatoes are best)
1/2 bunch of Celery, chopped
1 large Onion, chopped
8-10 Eggs, Hard Boiled (6 of them chopped) save rest for garnish
1 large jar Miracle Whip
Mustard
Pickle Relish
Salt & Pepper & Parsley to taste

Cut potatoes into medium squares. Place into large pan, cover with water and boil until potatoes are fork soft then cook another 10 minutes. Drain and let cool for a few minutes. Place potatoes into a large bowl. Then add rest of the ingredients. You will use most of the miracle whip so don’t be stingy. Squeeze a large amount of mustard on the potatoes (just enough to give color). Squeeze a large amount of pickle relish on the potatoes (just enough to give the sweet flavor). Add 6 chopped eggs to potatoes. Add salt, pepper and parsley to taste. Mix until well blended. Smooth salad and slice rest of eggs and place on salad then sprinkle with paprika for color. Chill for several hours or over night so flavors can blend in.
