1 lb. Cubed beef or stew meat cuts
3-4 Red potatoes, cubed
1 Large onion
2 Parsnips, chopped into large pieces
2-3 Carrots, chopped into large pieces
2 c. Spiced Cider or unfiltered apple cider
1 c. Beef broth
2-3 T. All-purpose flour
Salt
Pepper
1 Bay leaf
2 T. Olive Oil or Vegetable Oil

Heat oil in a large pan over medium-high heat. Add the cubed beef to the pan, and let it brown on all sides. Add chopped potatoes, parsnips and carrots. Reduce heat to medium.

Add the flour, salt, and pepper to the pan and combine. Cook for about 3 minutes.

Add the liquids to the pan, the cider (I like using spiced cider with cinnamon. If you can't find that, add a little cinnamon to the flour mixture - just a little!), the beef broth. Using a wooden spoon, scrape the bottom of the pan to combine all the flavors.

Add the bay leaf, and simmer the stew about an hour covered, or till the stew has thickened and the beef and veggies are tender.

Add any extra salt and pepper to taste.

This can be made in a slow cooker or crock pot as well! I recommend browning the beef with the flour in a separate pan first, then add everything together in your crock pot. Cook on low for 8 hours.
