¾ c. butter, softened
⅓ c. honey
½ c. light brown sugar
2 eggs
1 tsp. vanilla extract
2 c. regular oats
¾ c. wheat flour or unbleached flour
½ c. wheat germ
1 tsp. ground cinnamon
1 tsp. ground nutmeg
½ tsp. baking soda
1 c. pitted prunes, chopped
1 c. walnuts, chopped

Preheat oven to 350º F. Spray cookie sheets lightly with aerosol oil.
In a large bowl with electric mixer, cream butter, honey, sugar, eggs, and vanilla. Combine oats, flour, wheat germ, baking soda, cinnamon, and nutmeg in large bowl. Gradually mix into butter mixture, stirring to combine. Stir in prunes and walnuts. Drop by tablespoonful onto cookie sheets, leaving room between cookies for slight spreading. Bake for approximately 15 minutes or until light brown.
Remove from cookie sheets carefully using a spatula. Cool cookies on wire racks. Store in an air tight container. To freeze, wrap tightly in plastic wrap and then in aluminum foil.
