"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
3 cans Pillsbury Grand Butter Tastin' Flaky Layers Biscuits
2 packages Pioneer Brand No-Fat Gravy Mix
1 lb. Reduced fat sausage (Jimmy Dean's a good one)

Directions:
Directions:
Preheat oven to 350 degrees. In a skillet, scramble and brown sausage, stirring occasionally. While sausage is browning, spray muffin pans with cooking spray to make 24 biscuits.
Remove the top 2 to 3 layers of a flaky biscuit and set aside on wax paper. With the rest of the biscuit, pat out into a circle about twice the size. Press into muffin well with dough slightly over the edges. Repeat with remaining biscuits.
Drain sausage on paper towels. Using the same skillet, follow the package instructions to make the gravy. Return sausage to gravy. Fill biscuit wells full with the sausage gravy. With remaining biscuit layers, lay on top of gravy and crimp edges together. Repeat with remaining biscuits. Bake according to biscuit directions.
Serve with eggs and/or fresh fruit or by itself. You can also freeze after baking. Heat in microwave for about 2 minutes for a quick week day morning start.
