3 1/2 c. Great Northern Beans
1 1/2 lbs. Thick Sliced Bacon, Diced
3 Large Green Pepper, Diced
2 Medium Yellow Onions, Diced
4 Medium Celery Ribs, Diced
1 Jalapeño with Seeds, Diced
1 tbls. Finely Chopped Garlic
4 c. Chicken Stock
4 c. Quality BBQ Sauce
One 12 oz can Tomato Paste
1/4 c. Molasses

Soak beans overnight in bowl of cold water. Drain and rinse.

Put beans in large pot. Add cold water to cover generously and boil. Reduce heat and simmer until tender (1 hour).

Cook bacon until crisp. Set aside. Add green pepper, bacon chips, onions, celery & jalapeño to a casserole dish and saute over high heat about 3 minutes. Add garlic and saute 2 minutes longer.

Stir in reserved bacon, stock, BBQ sauce, tomato paste, & molasses. Bring to a simmer.

Preheat oven to 400º. Drain beans and add to casserole. Bake 1 hour stirring gently occasionally every 15 minutes. Season w/ salt and serve.
