2 cups Masa
1 2/3 cups Boiling Water
1 tbsp. Salt
1 block Monterey Jack Cheese, shredded
1 block Cheddar Cheese, shredded
1/2 Onion, chopped (optional)
2 cans Hatch Enchilada Sauce

Directions:
Directions:
Mix first 3 ingredients together. Let sit for 15-20 minutes. Make into 12-14 balls. Press into tortillas and cook in skillet.

On flat tortilla add both cheeses and onion. Roll up and place open side down in 9x13 inch casserole dish. Cover with enchilada sauce and sprinkle top with remaining cheese. Bake 20-30 minutes at 350º.
