2 lbs. pork tenderloin
2 Tbsp. butter
1/2 cup onion, chopped
1 tsp. grated orange peel
2/3 cup orange juice
1/3 cup dry sherry
2 Tbsp. sugar
2 tsp. salt
Dash of pepper
1 bay leaf
1 Tbsp. cold water
1 Tbsp. cornstarch

Directions:

Brown meat on all sides in butter; remove meat. In same skillet, cook the onion until tender. Add orange peel, orange juice, sherry, sugar, salt, pepper and bay leaf. Return meat to pan and cover. Simmer for 1 hour or until tender, turning the meat occasionally. Remove meat to warm serving platter and slice.

Combine cornstarch and water; stir into orange sauce. Bring to a boil. Cook for 2-3 minutes, stirring until slightly thickened. Drizzle some sauce over the meat and serve with the remainder.
