Mexican Cornbread Recipe

1 lb. ground beef, browned and drained
1 c. chopped onion
1 clove garlic
1 green pepper, chopped
4 ribs celery, chopped
2 c. yellow corn meal
1 tsp. salt
1 tsp. baking soda
1/2 c. oil
4 eggs
2 c. milk
2 c. cream style corn
jalapeno slices, to taste
American cheese slices

Directions:
Directions:
1. Saute onion, garlic, green pepper and celery until tender. Add half of this to the ground beef and season with 1 tsp. each basil, chili powder, oregano and salt.
2. Mix together the cornmeal, salt, soda, oil, eggs, milk, and corn. Add the remaining half of vegetables to this and season with 1 tsp. chili powder.
3. In a large pyrex (13" x 9") sprayed with Pam, layer 1/2 cornmeal mix. Cover with ground beef mix. Place jalapenos (to taste) over grond beef layer.
4. Place cheese slices over jalapeno layer being carefull edges are free of cheese slices so cornmeal mix will seal when you pour the remaining layer of cornmeal mix over the cheese layer.
5. Bake at 350º for 45-60 minutes. Test for doneness as you would a cake.

This recipe was first told to me in Virginia in 1984 by Lou Discon, a cajun friend from Louisianna. It is involved, but worth the effort and requested often.
