12 med Red bell peppers
10-20 red jalapeņos, depending on desired spiciness
5-10 assorted green, yellow or red hot peppers
6 cups chopped ripe tomatoes
2 large onions. Any kind will do.
3 cups white vinegar
4 cups granulated sugar
1 box pectin (sure-jell)

Mix all ingredients together except pectin, bring to a boil, then reduce heat and simmer for 2-3 hours until thick and deep red. Whisk in the pectin and bring to a full rolling boil for 1 minute. Remove from heat and pour into sterilized jars. Process in boiling water bath for 20 minutes.

I use 1/2 pint jelly jars, because 8 ounces is the right amount of pepper relish to spread over a block of cream cheese for a party appetizer. I also mix it with mayonnaise to make a delicious sandwich spread and with grated cheese to make homemade pimiento cheese.
