2 pkgs. coconut surprise cake mix
1 3/4 c. light corn syrup
pinch of salt
1 1/2 tsp. vanilla
nuts and cherries

Separate four of the eggs and set aside the four egg whites. Prepare cake mixes according to package directions, using 2 egg yolks and 1 whole egg for each mix in place of 2 whole eggs. Pour 1 1/2 c. batter into greased and floured 1-pound shortening can. Divide remaining batter into 2 greased and floured 2-qt. oven-proof mixing bowls.
Bake in a preheated 350º oven for 20 minutes for cake in the can, 45 to 50 min. for the cakes in bowls, or until cakes test done. Cool 10 - 15 minutes, and then turn cakes out on a rack to cool. Slice tops from each cake to level them and cut each cake in half crosswise. Put corn syrup into a sauce pan and bring to a boil. Beat reserved egg whites and salt until they stand in soft peaks. Gradually beat in the hot syrup and continue beating until frosting holds its shape. Beat in vanilla. Spread frosting between layers of the two bowl cakes and sandwich level sides together to form the body of snowman. Place body of snowman on serving dish and top with can cake to form head. Frost snowman completely with remaining frosting. Decorate with nuts and cherries to form buttons and face of snowman. Tie ribbon around neck to form scarf and decorate serving dish with flaked coconut to resemble snow.

Mama enjoyed making this cake. I don't know when she cut the recipe from a newspaper, but research on the internet using the title and author of the article shows that it would have been between the mid-1950's and 1960's. I made this cake for my twins' first or second birthday party (I forgot exactly which one) and Mom crocheted a scarf for the snowman's neck. The kids loved it!
