Ingredients:  
1 c. uncooked white rice (Uncle Ben's parboiled is best)
2 tsp. butter
2 cloves garlic, minced
1 tsp. grated lime zest
1 can chicken broth (14-15oz)
1/4 c. water
2 Tbsp. fresh lime juice
2 tsp. sugar
3 Tbsp. fresh chopped cilantro

Directions:
Directions:
In a frying pan, combine the rice, butter, and garlic.
Lightly brown until the rice begins to turn golden.
Pour into a 2-3 qt pan with lid and add the lime zest, chicken broth, and water.
Bring to a boil.
Cover & simmer on low for 15-20min, until rice is tender.
While the rice is simmering, combine lime juice, sugar, & cilantro in a small bowl. Pour on top of the rice when the rice is done. Fluff with fork.
Serve as a side or in burritos/tacos/salads with Cafe Rio sweet pulled pork and Tomatillo Dressing.
