2 boxes of chocolate cake mixes (deep chocolate)
1/2 cup of vegetable oil
4 eggs

2 cans of store bought frosting vanilla or cream cheese (whipped)
peppermint or mint extract
food coloring (colors that coordinates with the holidays)

Directions:
Directions:
Preheat oven to 375 degrees F

Roll into balls about 1 inch. Press down gently on the cookie for flat top or bottom.

Bake for 6 1/2 to 7 minutes

For the icing
Stir in about a cap full of peppermint or mint extract. Taste to see if the icing needs more. Add the amount of food coloring to the desired color.

Spread icing on one cookie, then place another cookie on top.
