1/2 onion
1/2 green pepper
1 yellow pepper
1 red pepper
2 cans shoepeg corn
2 cans black-eyed peas
5 stalks celery
1 c. sugar
1 c. apple cider vinegar
1 c. olive oil

Directions:
Directions:
Finely chop vegetables, drain canned vegetables and mix together. Heat the vinegar, oil and sugar until dissolved. Pour over vegetables and chill overnight.
