3 cups chicken, cooked and broken into pieces
1 cup red bell pepper, diced
1/4 cup chopped fresh cilantro
2 cloves garlic, minced
1/2 jalapeño, seeded and chopped
1 (15 oz.) can corn, drained
1 (15 oz.) can black beans, drained
1 (10 oz.) can diced tomatoes and green chilies, drained
1 (15 oz.) can tomato sauce
1 (8 oz.) can tomato sauce
2 tsp. ground cumin
1 tsp. salt
1 tsp chili powder
16 oz. sour cream
8 oz. cream cheese
1 box oven-ready lasagna noodles
8 oz. Monterey Jack Cheese, grated
8 oz. Cheddar Cheese, grated

In a large sauce pan, combine chicken and the next 12 ingredients. Bring to boil over medium heat, then reduce heat and simmer for 15 minutes. In a medium bowl, mix cream cheese then add sour cream. Preheat oven to 350º. Lightly grease a 9 x 13 baking dish and spoon 1/3 of sauce, then 4 noodles, then cheese mixture. Sprinkle with half of the two grated cheeses over sour cream mixture. Repeat the layers leaving the grated cheese as the last thing on top. Bake 35 to 45 minutes or until hot and bubbly. Let rest for 10 minutes before serving to thicken.
