1 1/4 cups boiling water
1 cup quick oats
1/2 cup shortening
1 cup brown sugar
1 cup white sugar
2 large eggs
1 1/3 cups flour
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 cup chopped nuts

ICING
6 tbsp melted butter
1/2 cup brown sugar
1 cup coconut
1/2 cup chopped nuts
1-3 tbsp milk

Directions:
Directions:
Pour boiling water over the quick oats. Let stand 20 minutes.

Cream shortening and sugars until light; add eggs and beat well.

Sift flour with salt, soda, and cinnamon. Add to creamed mixture with the oat mixture and beat just until well mixed. Stir in nuts.

Pour into a greased and floured 9 x 9 inch square pan. Bake 30-35 minutes in a preheated 350 degree F oven.

Mix all of the icing ingredients, adding just enough milk to make the mixture loose enough to spread.

When cake is done, turn oven to broiler setting. Spread icing mixture on cake, and broil only until golden brown. Watch carefully because it can quickly go from brown to burned!

This recipe was handed down to us by our mother, Cecily Bevona. It was a family favorite when she was growing up in Kelso, Missouri, and it quickly became a family favorite as we were growing up in Chili, New York. It's moist and rich and tastes heavenly!
