1 stewing hen
1 bay leaf
12 peppercorns
8 allspice berries
1 sprig parsley
1 sprig dill
1 large onion
3-4 potatoes (cubed)
3 carrots (cut in "pennies")
1 pint tomatoes
1 head cabbage

Final seasonings—vinegar to taste, sugar to taste, whipping cream—added last, when served.

Cook chicken, covered with water, spices,onion. Strain broth and debone chicken.

To the broth, add potatoes and carrots and start cooking—until both are getting tender. Next add cabbage and tomatoes and cook awhile—about 1/2 hr. Add chicken and check for final seasonings. Add cream at the end of cooking, or at the table. Do not boil after cream is added.

This is a Lavina Goering recipe and she said it's always better the second day (which has proven to be true). You may also decide if you want to remove the berries and peppercorns, or leave them as a surprise—she always did!
