1 C. Butter, softened
1/2 C. Sugar
1/2 C. Brown Sugar, packed
1/2 tsp. Baking Soda
1/4 C. Hot Water
1 C. Flour
3 C. dry Oatmeal
1 tsp. Vanilla Extract

Directions:
Directions:
Preheat oven to 350º.
Cream butter and sugars together. Dissolve the baking soda in the hot water and stir. Add baking soda mixture to butter mixture, stir well. Add in the flour, oatmeal and vanilla, stir well.
Drop dough by teaspoonfuls onto ungreased cookie sheet. Flatten with a fork dipped in hot water or the bottom of a glass which has been dipped in sugar. Bake for 8 minutes. Remove cookies from baking sheet immediately. These cookies will be very thin.

This recipe does not use any Eggs. I received this recipe from Helen Strike, who was my home care patient when I worked at Allina Home Care. These cookies are good!
