Chicken Marsala Casserole Recipe

2 T butter
1 1/2 T flour
1/2 C heavy cream (I use fat free)
Salt, pepper
2 C cooked, shredded or diced chicken (about 2 chicken breasts if you are making your own...left over rotisserie chicken works well)
Diced sm onion or shallot
Garlic
10 oz sliced mushrooms
1/2 C Marsala wine
2 T chopped parsley
1 c rice
2 T Parmesan cheese

Directions:
Directions:
Preheat oven to 350º. In large skillet, melt butter. Add mushrooms and onions or scallions, cook until softened, about 5 min. Sprinkle flour on top and cook 1 min, stirring. Add Marsala and cream and simmer, stirring, until slightly thickened, about 3 min. Stir in 2 C water (we use chicken stock), parsley, salt and pepper to taste.
In a greased 9 by 13 dish, spread the (uncooked) rice in an even layer, top with chicken, pour mushroom gravy on top. Cover snugly with foil and bake until bubbly, about 35 min. Remove foil, sprinkle with Parmesan and bake for 5 more min.
