1 cup sugar
1/4 cup sifted flour
dash salt
2 tablespoons melted butter
2 teaspoons grated lemon peel
1/2 cup lemon juice
1 1/2 cup scalded milk
3 egg yolks, beaten
3 stiffly beaten egg whites
1/2 cup coconut optional

Directions:
Directions:
Combine sugar, flour,salt and butter. Add lemon peel and juice slowly. Stir milk & beaten egg together and add to the flour mixture. Mix well .
Fold in egg whites and pour into custard ramekins. Using a shallow roasting pan, fill with 1 inch of water Set ramekins in water and bake in slow oven for 45 minutes or till cake is done

If using coconut, add the coconut to the flour mixture with egg whites.
