2 (14.5-oz.) cans French style green beans
2 (15-oz.) cans LeSueur peas
1 (11-oz.) can shoepeg corn
1 (11-oz.) can Mexicorn
1 1/3 c. apple cider vinegar
2/3 c. water
1 1/2 c. sugar
1 tsp. salt
black pepper to taste

Directions:
Directions:
Drain all canned vegetables and combine. Mix vinegar and water in a microwave-safe container. Stir in the sugar, salt and pepper and heat until sugar is dissolved. Pour the liquid mixture over the vegetables. Diced red onion, green pepper and/or finely diced carrot may be added if desired. Chill overnight.
