1 lb. pecans
1 cup sugar
1 tsp. cinnamon
1/3 cup butter
1 egg white
1 tsp. salt
1 tsp. water

Directions:
Directions:
Preheat oven to 275 degrees. Using a jelly roll pan, place the butter in pan and melt in oven. In a large bowl, mix egg white, water, and salt - whip them together until fluffy. Place all the pecans into the egg mixture and stir until well coated. Mix sugar and cinnamon together in a separate bowl, and then pour on top of the pecans and mix it well. Put the pecan in the jelly roll pan, bake for 1 hour, turning every 15 minutes. Cool on wax paper. Makes 4 - 5 pints.
