1/4 large red or green pepper, diced
1/4 large white onion, diced
Cilantro leaves (to taste)
Fresh black pepper
1 (14.5-oz.) can diced tomatoes (I use fresh when in season, or Hunts is the best)
Cayenne pepper
Emeril's Essence or another southwest/Cajun-type seasoning mix (I like Slap Ya Mama)
2 pinches of salt
1/4 c. white vinegar

Directions:
Directions:
Mix first 5 ingredients together, then add pepper, seasoning, sugar and white vinegar. I have made this recipe all different ways and with all different seasonings, and I just usually taste it until I like it.
