1/2 c. balsamic vinegar
2 tsp. Dijon mustard
1 tsp. salt
1 tsp. black pepper
1 tsp. garlic powder
1/3 cup extra-virgin olive oil
12 oz. box tricolor Rotini pasta
1 T. dried basil
1 tsp. dried oregano
1 can quartered artichoke hearts
1/3 cup diced sun-dried tomatoes (in jar)
1/4 cup diced red onion
3/4 to 1 cup sliced kalamata olives
5 ounces crumbled Feta cheese
Freshly grated Parmesan cheese

Directions:
Directions:
Blend the vinegar, mustard, salt, pepper, and garlic powder to taste in small bowl. Slowly add oil; blend all until smooth. Set aside. Cook Pasta according to package directions. After cooking, drain and pour pasta into large bowl. While pasta is warm, pour half of the dressing mixture over pasta and toss. Let cool at room temperature. Once cooled, add basil, oregano, artichokes, sun-dried tomatoes, red onion, and olives. Mix together. Before ready to serve, add Feta and Parmesan cheeses. Add remaining dressing to coat. Mix well to coat all ingredients before serving. Serves 6 to 8.
