5 lbs. frozen beef roast, boneless
salt and pepper to taste
1 large onion
2 bay leaves
1 c. beef broth
1 large can mushrooms

Directions:
Directions:
Salt and pepper roast. Place roast , onion, bay leaves and broth in roaster. Roast at 300º over night for about 5 to 6 hours. This will keep your house a little cooler during those hot summer days. In the morning, remove from oven and let stand for at least 20 minutes. Remove roast and place the juices in the frig to make removing excess fat easier. While juices are cooling, slice or pull the beef. Combine meat, juices and mushrooms (more broth may be added if necessary). This may be served hot or cold.

This is great to put in the crock pot and bring to a pot luck, or my family will take individual servings, reheat them in the microwave and have lunch. Great for a quick grab during busy summer weekends.
