2 cups butter
2 bags semi-sweet chocolate chips
150 gm (6 oz) unsweetened chocolate
6 large eggs
2 tbsp. plus 1 1/2 tsp. powdered instant espresso
2 tbsp. vanilla
2 cups sugar
1 cup flour
1 tbsp. baking powder
1 tsp. salt
3 cups California chopped walnuts (optional)

In the top of double boiler, melt the butter, one of the bags of chocolate chips and unsweetened chocolate until smooth. Cool to room temperature. Gently mix eggs, powdered espresso, vanilla and sugar. Stir in chocolate mixture. Set aside. Mix flour, baking powder, and salt. Add it to the chocolate mixture. Add the other bag of chocolate chips and the walnuts. Pour batter into 9x13 baking pan and bake at 350 º F for 30 minutes.

Halfway through baking open the oven, lift the pan, and smack it on the rack. Turn the pan around and smack the other side. This stops the rising process and make the brownies extra rich and "sinful". Don't overbake - the brownies will be moist and fudgy inside. Cool on baking rack.
