16 oz pkg dried navy beans
7 c water
1 ham bone
2 c diced ham
1/4 c minced onions
pinch black pepper
1 bay leaf
1/2 c sliced carrots
1/4 c ketchup

Directions:
Directions:
Cover beans in cold water and bring to a solid boil for 10 minutes. Remove pan, do not drain, set in sink. Add 1/4 c baking soda and stir until the foam that will appear disappears. Drain and rinse well in cold water to remove the soda flavor. Place rinsed beans in large stock pot. Add water and bring to a boil. Boil gently for 2 minutes. Remove from heat. Cover and let stand for 1 hour. Add ham bone, ham, onion, pepper and bay leaf. Bring to a boil, reduce heat, cover and simmer for 1 hour and 15 minutes or until beans are soft. Skim surface of soup occasionally while it is cooking. Add carrots and ketchup until carrots are tender. Remove ham bone, scrape any meat from it and place back in soup.
