Ingredients: 6 slices of bread (coarsely cut or broken up 1/3 cup grated Italian five cheese or Mexican Four Cheese 1/2 stick melted butter 1 tsp Jerry's Dry Rub and Seasoning mix 1/4 cup broth (I prefer to the same type of broth as my meat dish, pork for pork, beef for beef, etc...) 12 evenly sized Baby Portabella Mushrooms (stems, skirts removed). 12 Cherry Tomatoes

Directions:Preheat Oven to 350º Lightly toss bread, cheese, seasoning, and about 2 tbsp of butter until blended well. (DO NOT OVER MIX) Add just enough broth to wet moisten the mixture. Fill each mushroom with dressing and place in a shallow baking dish or pan coated with a cooking spray. place tomatoes between each mushroom. Pour remaining butter evenly over mushrooms and tomatoes. Bake for about 20 minutes until the dressing feels firm. Remove from heat and arrange mushrooms and tomatoes on a serving dish. Garnish with fresh parsley sprigs and lemon twists. |

Notes: Grated Parmesan and Romano cheese may be sprinkled over mushrooms either before or after cooking if desired. Save the stems from the mushrooms. They can be chopped and added to sauces, gravies, and soups. The "skirts" I mentioned are the white lacey looking part of the mushroom under the crown. This part of the mushroom can be bitter.
