2 chicken breasts, split in half lengthwise
2 oz. sliced pepper jack cheese
2 c. Cheez-it crackers, crushed
1 T. taco seasoning
1 stick butter, softened
Lettuce, shredded
Tomato, chopped
Green onion, chopped
Black olives, sliced
Sour cream
Salsa
Directions:
Directions:
Take split chicken breasts and pound into thick cutlets. Add a thin slice of cheese. Roll tightly and secure with a toothpick. Combine crackers with taco seasoning. Roll chicken rolls in melted butter and crushed crackers. Bake at 375° for 30 minutes. Top chicken with remaining ingredients and serve.
