1 1/3 cup milk
½ teaspoon salt
1 cup flour
Vegetable oil to cover bottom of skillet
Homemade applesauce (see notes)
Cinnamon
Sugar

Directions:
Directions:
Mix ingredients well. Pour batter into hot greased skillet. Wearing a hot pad mitt, lift the skillet and roll the batter so it runs all over the whole bottom of the skillet. As soon as it appears to dry, turn flapjack with spatula and brown on both sides. Roll applesauce sprinkled with cinnamon and sugar into flapjack. Sprinkle a bit more cinnamon and sugar on the top.

To make homemade applesauce: Peel, core, and chop 4 tart apples. Combine with ¾ c. water and sugar (optional to taste, about ¼ cup) in a sauce pan. Cover and cook over medium heat for 15-20 minutes or until apples are soft. Allow to cool, then mash with a fork or potato masher.
