1 1/2 cups oil
2 cups sugar
3 cups flour
2 tsps vanilla
3 1/2 cups diced apples (Jonathan or McIntosh- Not Granny Smith)
1 cup nuts
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 cup coconut (optional)
1 cup packed brown sugar
1/4 cup milk
1 stick margarine

Grease and flour 9x13 baking dish or bundt pan (bundt pan works better) and heat oven to 300 degrees. Cream eggs, oil, and sugar thoroughly - add vanilla, cream a little more. Add diced apples and nuts. Sift together baking soda, salt, cinnamon, nutmeg, and coconut (optional) and fold into creamed mixture. Batter will be stiff. Pour into baking dish/pan. Bake 50 to 65 minutes at 300 degrees. Test with tooth pick, it should be dry.

Melt brown sugar, milk, and margarine together in sauce pan and cook on low for 4 minutes. Poke holes in cake and pour hot glaze slowly over the entire surface of the cake.

This cake is best served warm. You can also microwave it to restore warmth. Better than apple pie a la mode when you add vanilla ice cream!
