6 slices bacon
1 c. chopped onion
2 31 oz. cans pork and beans with tomato sauce
2 medium Granny Smith apples, peeled, cored & cut into bite-sized pieces
2 tsp. Worcestershire sauce
3 - 4 tsp. curry powder
4 tsp. mustard - coarse-grain bown mustard best
1/4 c. packed brown sugar
1/2 c. catsup

Directions:
In medium skillet cook bacon until crisp. Remove the bacon, reserving 2 tbsp. drippings. Drain, crumble, wrap & chill. Cook onion in reserved drippings over medium heat until onion is tender but not brown. In 3 -4 qt, casserole combine onion, beans, apples, catsup, brown sugar, mustard, curry powder and Worcestershire sauce. Bake, uncovered, in 350 degree oven for 1 hour or to desired consistency, stirring a few times. Before serving, top with crumbled bacon.

Personal Notes:
Can make without the bacon, sauteing the onion in olive oil instead of bacon fat. It's still yummy, just doesn't have the bacon flavor dimension.
