2 -1/4C. Whipping Cream
12 oz Dark Chocolate, shaved
3 Tbsp Rum
4 Tbsp Butter (unsalted)
1/2 Tsp unflavored gelatin
1 C. Berries (strawberry slices, raspberries, blueberries etc.)

Chill a 2 cup carton of whipping cream in refridgerator and a metal bowl and beaters in the freezer.

melt the butter over low heat, add the shaved chocolate and the rum stirring constantly until chocolate is almost completely melted. in a small sauce pan add the gelatin to 1/4 cup cream and allow to bloom for 10 minutes.

put the chilled 2 cups of cream in the chilled bowl and use the cold beaters to whip the cream until peaks form and light and fluffy. about 10 minutes. Do not over beat as it will change the texture and start to turn into butter. once it is cream set aside for a few minutes while you add the cream with the gelatin to the chocolate mixture. Once mixed put chocolate into a bowl and begin to fold in come of the whipped cream about 1/3 of it at a time until all of the cream is folded in. Do not over fold. it is okay if some of the mousse has some white swirls in it from the cream is necessary. Put into special wine glasses or bowls. Top with whipped cream and berries. Refridgerate for 1 hour before serving.

To make whipped cream for the top use the other 1-3/4 C. of cream you have left over (as you should have used part of another whipping cream carton when making the cream gelatin mixture). Use your mixer and beat on high the cream and add in 1/3 Cup of powdered sugar. Mix until peaks form. Refridgerate.
