1 ½ pounds carrots, sliced to make 4 ½ or 5 cups
½ cup mayo or salad dressing
2 tablespoons chopped onions
2 tablespoons prepared horseradish
½ teaspoon salt
Dash of pepper
¼ cup crushed saltine crackers
2 teaspoons melted butter

Directions:
Directions:
In a saucepan cook carrots covered in boiling salted water 10 minutes or until tender. Place in a 1 quart casserole. Combine mayo, onions, horseradish, salt and pepper and spoon over carrots. Mix crumbs and butter and sprinkle on top. Bake uncovered @ 350 degrees for 30 minutes, or until hot.
