1 lb ground beef
2 tbsp salad oil
1 med onion, finely minced
1 clove garlic, minced
1 can sliced mushrooms, with liquid
8 oz can tomato sauce
6 oz can tomato paste
6 oz can water
2 tsp salt
1 tsp oregano
2 eggs
10 oz pkg. frozen chopped spinach, thawed & drained
1 cup cream style cottage cheese
1/3 cup grated Parmesan cheese
6 wide lasagna noodles, cooked & drained
Mozzarella cheese slices

Brown beef, onion and garlic in 1 tbsp of oil. Blend in mushrooms, tomato sauce, tomato paste, water, 1 tsp of salt and 1 tsp of oregano. Simmer 15 minutes. Meanwhile, mix 1 egg with spinach, cottage cheese, Parmesan, remaining 1 tbsp oil and 1 tsp salt. Beat second egg slightly anf toss with cooked noodles. Pour half of meat sauce into 9" x13" pan. Cover with 3 noodles. Spread all spinach/cheese mixture over noodles. Add another layer of noodles and remaining meat sauce on top. Cover with foil and bake 45 minutes in 350ºF oven. Remove foil and place cheese slices on top. Bake for another 15 minutes.
