1 8 oz. package of cream cheese
1 large clove of garlic
3/4 cup fresh cilantro, washed and chopped
1 1/2 cups fresh cucumber, peeled and cubed
1 1/2 cups fresh tomato, any kind, deseeded and chopped into cubes

Directions:
Directions:
Let cream cheese soften. Mix together cream cheese, garlic clove and 1/2 cup of the cilantro in food processor. Spread mixture on a small serving plate---a little less than 1/2 inch thick. Place in refrigerator for at least an hour to let the flavors blend. Just before serving, sprinkle the tomatoes and cucumbers on top of the cream cheese mixture. Garnish with the reserved chopped cilantro. Serve with your favorite cracker or pita chip.

This is a great hot weather appetizer. I only make it in the summertime when the tomatoes and cucumbers are fresh and plentiful.
