2 6oz. cans tuna (drained)
1 15oz. can white or navy beans (completely drained)
1 8oz. can chopped water chestnuts (drained)
1 8oz. bag baby carrots (shredded)
1 small onion finely chopped
1 c. shredded Colby Jack cheese
1/2 c. Mayonnaise
1 box Wheatables or other snack crackers

Directions:
Directions:
In a medium size bowl, add tuna, beans, water chestnuts, carrots, onion, cheese, and mayonnaise. Stir until mixed well. Chill for an hour or overnight. Serve with crackers.

I created this tuna salad to appeal to a family who do not like traditional tuna salad. They loved it. It works well for brunches, parties, or as a light lunch. Enjoy!
