6 cups fresh or frozen peach slices. peeled & pitted
1/2 c. brown sugar, packed
1/4 c. unbleached flour
1 T. lemon juice

Topping:
1 c. unbleached flour
3/4 c. brown sugar
3/4 c. rolled oatmeal
1 tsp. ground cinnamon
1 stick butter, cold, cut in 8 pieces

Directions:

Preheat oven to 350º. Butter a 9X9 glass baking pan or 2 qt. stoneware baking dish. Set aside. In a large bowl, toss peach slices w/ 1/2 c. brown sugar, 1/4 c. flour and lemon juice. Arrange in prepared baking dish. Set aside.

Combine 1 cup flour, 3/4 c. brown sugar, oatmeal & cinnamon in the bowl of food processor, and pulse until blended. With the food processor running, add cold butter a few pieces at a time. Pulse until the butter is incorporated and looks like coarse meal.*

Spread topping ingredients evenly over the peaches and bake at 350º for 30-40 minutes or until peaches are bubbling through and the topping is starting to brown. Remove and cool for 15 minutes before serving. Serve with ice cream or whipped cream. Refrigerate any leftovers. Serves 6

* If you don't have or want to use food processor, use a pastry blender or 2 knives to cut the butter into the dough until it resembles coarse meal.
