5 lbs. russet potatoes
2-3 celery stalks
1 medium onion
1/2 lb. bacon
salt
white pepper
1 bunch green onions
oyster crackers

Directions:
Cut potatoes, celery and onion into 1 or 2 inch pieces and add to medium-sized pot. Cover with water and bring to boil. Simmer until potatoes, celery and onion are very soft. While potatoes, celery and onion are cooking, fry bacon until crisp and set aside. Save bacon grease and add to pot. Puree potatoes, celery and onion with hand or stationary blender and return to pot to continue to simmer. Add salt and white pepper to taste. Cut green onions, including stems, and bacon into small pieces. Serve soup with bacon bits, green onions and oyster crackers to preference.

Adding the appropriate level of salt and pepper is key. Continue to retaste until it is properly seasoned. It will take quite a bit of salt and not a lot of pepper. This recipe can be sized up very easily for larger groups.
